As Christmas creeps closer and closer each day, many will already be starting to plan out the food items that will be served up during the festivities.

For many households, this will include going all out with a Christmas dinner and everything that comes with it. From roasting the turkey perfectly, to finding the best recipie for roast potatoes and gravy, food often dominates the day.

However, one Christmas dinner element that is easily forgotten are the roasted vegetables, which don’t get as much love as you’d hope.

Carrots and parsnips may seem boring in comparison to pigs in blankets, but they can really enhance the whole meal if cooked correctly.

In fact, doing just one thing differently can completely transform the finished results. So how do you make the best roast veggies?

A cook named Max took to TikTok to share his go-to way to cook carrots and parsnips, which will go perfectly with any Christmas dinner.

He said: “This is my favourite way to make honey roasted carrots and parsnips. They’re honestly so delicious and really easy to make.”

To pull off Max’s recipe yourself, start by peeling the carrots and parsnips. Then, cut off the top and bottom of the veg and slice them lengthways.

While most people would be getting ready to put the veg directly into the oven, Max puts them in a saucepan along with some water.

He par boils them for 10 minutes until they’ve softened, then drains and let’s the veggies steam for a few minutes. This should help the carrots and parsnips to cook evenly in the oven.

Once the vegetables are lovely and tender, it’s time to get roasting. Max drizzles oil onto the vegetables in the oven tray, before seasoning generously with salt.

He then roasts them in the oven at 180C for about 30 minutes, taking them out and flipping at the 15 minute mark.

After this, Max chops fresh rosemary and thyme and scatters over the veggies. A grind of black pepper and drizzle of honey can also really amp up the flavours.

Once these have been added, pop the veg back in the oven for around 15 minutes. When fully cooked, Max said: “They should be golden brown, and nicely caramelised on the bottom, like this.”

Trying the delicious pasnips and carrots, the foodie gushed: “That is absolutely banging, lovely.”

And we must admit, they do look fantastic!
