Christmas is nearly here, and you’re likely thinking about recipes for your festive dinner. One of the classic side dishes is Brussels sprouts, but these vegetables have got a bad reputation.
Sprouts are delicious, but they need to be cooked correctly for them to shine. Many people choose to cook their sprouts with bacon, but this means any vegetarians at the table miss out. With the addition of one simple ingredient, your Christmas sprouts will be crispy, crunchy, salty and delicious – and still vegetarian friendly.
Gousto Chef, Sophie Nahmad, has shared her recipe for the perfect Brussels sprouts, which she brings to a whole new level with the addition of Parmesan cheese. She also smashes them to create that perfect crunch.
Sophie said: “Many people think they don’t like sprouts, but they’ve just never had them cooked properly.
“Smashing them creates those gorgeous crispy edges, and a generous snowfall of Parmesan adds that nutty, salty depth.
“They come out golden, crunchy and genuinely addictive. It’s a guaranteed crowd pleaser.”
Smashing them increases their surface area, much like a roasted potato. Sophie said: “Smashing increases surface area, helping sprouts crisp beautifully in the oven.
“It’s the same principle as smashed potatoes, more texture, more flavour.
“Parmesan brings the umami hit, so instead of slightly bitter boiled sprouts, you get crunchy, cheesy bites that feel special enough for Christmas but easy enough for weeknights.”

Ingredients
500g Brussels sproutsTwo tbsp olive oil50g grated ParmesanSalt and pepper, to taste
Optional for serving:
Lemon zest, chilli flakes, extra Parmesan
Method
Preheat your oven to 220CBring a large pan of salted water to the boil and add your sprouts. Boil for six to eight minutes until they are tender.Drain your sprouts and spread them evenly on a baking tray.Using the bottom of a mug, gently press down to flatten your sprouts slightlySeason them with olive oil, salt and pepper and your parmesan – make sure they are evenly coveredRoast for 15-20 minutes, or until they are golden and crispy.Finish them with some lemon zest or chilli flakes and serve immediately
